    The ultimate chocolate chip cookies

    Serves: Makes 20
    Cooking Time: 25 mins

    Ingredients

    • 230g butter, softened
    • 200g light brown sugar
    • 100g sugar
    • 2 eggs
    • 2ml vanilla extract
    • 360g cake flour
    • 5ml bicarbonate of soda
    • 2ml salt
    • 230g good quality dark chocolate, chopped
    • 230g good quality milk chocolate, chopped

    Instructions

    Preheat the oven to 180°C and lightly grease a baking tray.

    Cream the butter and sugar in a mixing bowl until light and fluffy. Add the eggs and vanilla extract, and stir to combine.

    Sift the flour, bicarbonate of soda and salt together, and add it to the butter mixture. Mix to combine. Fold in the chocolate.

    Form small round balls, about 4cm in diameter, and press onto the baking tray.

    Bake for about 15 minutes. Remove and place on a cooking rack to cool.

    Notes

    Cook's tip: If you prefer crunchier biscuits, press the biscuits a bit flatter on the baking tray and bake for an extra 5 – 6 minutes.
