Fresh, savoury, crunchy, and smooth, this broccolini recipe delivers a delicious mix of umami flavours and satisfying crunchy textures. Serve it as a standout side or a light main. The finishing touch? Nutritional yeast. Don’t be put off by the name. This vegan-friendly, gluten-free seasoning adds a rich, cheesy flavour similar to Parmesan. It’s made from a deactivated yeast grown on molasses, and while it won’t make anything rise, it will lift the flavour of your greens. Look out for it at Dis-Chem, Faithful-to-Nature, or your local health store.
Broccolini with crispy fried capers, rustic croutons and goat’s cheese
Ingredients
- 230g broccolini
- olive oil, to drizzle
- 1 wholewheat roll, broken into chunks
- salt, to taste
- nutritional yeast, to sprinkle
- 100g log goat’s cheese, broken into chunks
- deep-fried capers, to serve
- coriander leaves, to garnish
Instructions
PREHEAT the oven to 180°C. Place the broccolini in a roasting tray and drizzle with olive oil. ROAST in the preheated oven until the broccolini is cooked, but still crunchy, about 20 minutes.
PLACE the chunks of wholewheat bread in a roasting tin and drizzle with olive oil. Season with salt to taste. Roast in the same oven as the broccolini, until the bread is toasted and golden, about 10 – 15 minutes.
TO assemble, place the broccolini on a serving dish and sprinkle with the nutritional yeast (it’s salty, so go easy). Top the broccolini with the wholewheat croutons, chunks of goat’s cheese, deep-fried capers, and coriander leaves.
