La Colombe is proud to announce that Executive Chef James Gaag has been invited to cook at CONVERGENCE, a landmark global culinary event hosted by the two Michelin-starred Alchemist in Copenhagen from 29 January to 2 February 2026.
Taking place during the Nordic winter, CONVERGENCE brings together more than 60 of the world’s leading chefs, all ranked within The World’s 50 Best Restaurants Top 100, for a five-day collaboration that celebrates shared knowledge, creativity and the unifying power of food. Participating chefs represent 26 countries across six continents, forming one of the most ambitious international culinary gatherings to date.
CONVERGENCE was conceived by Rasmus Munk, founder and head chef of Alchemist, as a response to a world increasingly marked by division.
Gaag’s participation reflects La Colombe’s continued presence on the global stage, following a year of international recognition for the restaurant and its team.

Opportunities like this remind us how powerful food can be as a shared language, and I’m grateful to represent La Colombe in a space that values collaboration and exchange”, says Gaag, commenting on the invitation.
Each evening, guest chefs will present signature dishes within Alchemist’s immersive dining experience, alongside the restaurant’s own menu. The programme also includes a symposium component, designed to foster dialogue, exchange ideas and encourage collaboration among chefs, creatives and industry leaders from around the world.
I am happy and humbled beyond words that an idea born on a dark November night, at a time when the geopolitical situation in the world felt particularly fragmented, has grown into this powerful manifestation of culinary creativity and unity. One thing I truly love about our industry is that it goes beyond borders — we share a culinary language that unites us.
