If you’re on a sourdough baking journey like me, you’ll know that once the bug bites, it’s hard to let go. But along with the satisfaction of baking your own loaves comes one unavoidable side effect: plenty of sourdough discard every time you feed your starter. And while tossing it out might seem like the easiest option, you’d be surprised at just how many delicious things you can make with it instead.
So, the next time your sourdough starter needs feeding, don’t be too quick to throw that discard away. There are plenty of tasty ways to put it to good use. Less waste and something delicious to enjoy? That’s a win-win.
Sourdough discard brownies
I tried, tested and absolutely loved this sourdough discard recipe. It’s gooey, sweet and endlessly customisable, whether you add caramel (my personal favourite, because there’s no such thing as too sweet in my books), nuts, a sprinkle of sea salt or anything else you’re craving.
It’s quickly become a firm favourite among my family and friends too, with many of them putting in birthday requests for a batch. And honestly, I can’t blame them. It also makes a thoughtful homemade gift for just about any occasion.
English muffins
Personally, it took a few trial and errors for my English muffins not to come out too doughy and dense, but once you’ve nailed it, it will become your favourite morning meal or picnic snack.
Pizza base
One of the most popular ways to use your sourdough discard, this easy and delicious pizza base recipe is a must-try.
Cheese crackers
Make these to stock up for when the snack cravings hit, or to fill those lunchboxes.
Focaccia
Another one which I’ve tried and thoroughly enjoyed… There are various sourdough discard focaccia recipes available online – from the OGs to focaccia muffins and more. Here are just a few of our favourites:
