Cheddar Mug Scramble with Atchar
- Serves 1
- Preparation time: 10 minutes
- Cooking time: 2 minutes
- Cost per recipe: Serves 1 for under R20
Ingredients:
- 3 eggs
- 30 ml (2 tbsp) milk
- Few parsley leaves, finely chopped + extra
- Salt and pepper
- 30 ml (2 tbsp) cheddar, grated
- 30 ml (2 tbsp) atchar
Method:
- Spray a large mug with cooking spray. Beat together the eggs, milk and parsley. Season with salt and pepper. Add to the mug.
- Microwave on high for 40 seconds. Stir. Microwave for another 30 seconds. Stir again.
- Top with cheddar and atchar. Microwave for about 30 seconds or until cheddar has melted and eggs have set. Scatter with extra parsley.
