    Rye with smoked trout and creamed avo

    Chilli lime prawn and avo salad

    Avocado ritz

    Serves: 4
    Cooking Time: 15 mins

    Ingredients

    • 100g home-made or good quality mayonnaise
    • 50ml tomato sauce
    • 50ml fresh cream
    • 20ml brandy
    • juice of ½ lemon
    • finely ground black pepper, to taste
    • 2 avocados, halved
    • juice of 1 lemon
    • salt, to taste
    • cayenne pepper, to taste
    • mixed lettuce, to serve
    • 200g shrimps, boiled
    • 50ml fresh flat-leaf parsley, finely chopped
    • 16 prawns, boiled, to serve

    Instructions

    To make the seafood sauce, combine the mayonnaise, tomato sauce, cream, brandy and lemon juice, and season to taste.

    Brush the avocado with lemon juice and season with salt and cayenne pepper.

    Place the lettuce on a serving dish and top with one half of the avocado.

    Place the avocados on a bed of lettuce leaves. Fill with shrimps and spoon the seafood sauce over.

    Garnish with a few prawns and parsley, and serve immediately.
