• Rump steak with buffalo mozzarella, basil and egg

    Cooking Time: 30 mins

    Ingredients

    • 125ml (½ cup) avocado oil
    • juice of 1 lemon
    • 1 garlic clove, finely chopped
    • salt and freshly ground black pepper, to taste
    • 4 x 150g rump steaks
    • 4 large eggs
    • 2 buffalo mozzarella balls, torn
    • handful fresh basil

    Instructions

    Mix the oil, lemon juice and garlic in a bowl. Season and set aside.

    Heat a griddle pan to hot and grill the steaks to your liking.

    Soak the hot steaks in the oil mixture for about 2 minutes.

    Poach the eggs according to your preference. Serve the steaks topped with the mozzarella, basil and egg. Season well.
