• This is so easy to make! Prepare the crumble beforehand and sprinkle it over fruit of your choice for an instant fruity crumble. You can also grill fruit like pineapple and peaches over the coals and sprinkle with the crumble.

    Summer fruit crumble

    Ingredients

    • CRUMBLE
    • 120g (1 cup) cake flour
    • 80ml (? cup) castor sugar
    • 125ml (½ cup) butter, melted
    • 250ml (1 cup) dried coconut shavings or desiccated coconut
    • 125ml (½ cup) pistachio nuts
    • 500ml (1 cup) double cream
    • Greek yoghurt
    • 70g icing sugar
    • 1kg summer fruits (mangoes,papaya), sliced
    • 125ml (½ cup) of granadilla pulp (about 4 granadillas)
    • handful of fresh mint leaves
    • 2 limes, cut into wedges

    Instructions

    Prepare the crumble at home. Preheat the oven to 180°C. Combine the flour, sugar and butter and stir until the mixture resembles breadcrumbs. Add the coconut and pistachio nuts.

    Spoon the mixture onto a lined baking tray and bake until golden brown, about 30 – 40 minutes. Set aside to cool and place in a zip seal bag.

    Mix the yoghurt and icing sugar together in a mixing bowl.

    Arrange the summer fruit pieces on a platter, spoon yoghurt over and sprinkle with crumble, granadilla pulp and mint leaves. Serve with lime wedges.
