• A basic Caprese salad is always delicious, but the addition of fresh cherries and a wild garlic dressing takes it to a new level of deliciousness.

    Cherry Caprese salad with wild garlic dressing

    HANDS-ON TIME 15 min | TOTAL TIME 15 min | SERVES 4

    INGREDIENTS

    WILD GARLIC DRESSING

    • 1 tbsp balsamic vinegar
    • 1/4 cup olive oil
    • 1 tbsp honey
    • 3 wild garlic leaves, finely chopped
    • 4 cherries, pitted and chopped

    CAPRESE SALAD

    • 4 heirloom tomatoes, sliced
    • 300g fresh mozzarella, torn
    • 4 cherries, halved
    • 10 basil leaves

    METHOD

    WILD GARLIC DRESSING

    ADD the balsamic vinegar, oil, honey, wild garlic and cherries to a bowl; season to taste with salt and pepper. Whisk until the dressing is combined and emulsified; set aside.

    CAPRESE SALAD

    LAY the tomatoes on a large serving platter. Top with pieces of torn mozzarella and cherries halves, then sprinkle the basil on top.

    DRIZZLE over the wild garlic dressing and serve.

     

    Tip from the team: For another interesting use of the wild garlic plant, make pickled garlic flowers. Pick the flowers and place them in a bowl with 1/4 cup vinegar, 1 tbsp honey and a generous pinch of salt. Set aside until pickled to your taste, then use as a garnish on top of your salad.
