This hearty Irish stew puts a fresh spin on a classic, with tender lamb neck, sweet carrots and earthy turnip slowly simmered until meltingly tender. The real star is the vibrant carrot-top salsa verde, made with the leafy tops that might otherwise go to waste and spooned over the rich stew for a fresh, herby finish. Toasted hazelnuts add the perfect final crunch.
Irish stew with carrot-top salsa verde
Ingredients
- Irish stew
- ⅓ cup olive oil
- 1 kg boned lamb neck, cut into 5cm pieces
- 1 onion, finely chopped
- 1 trimmed celery stalk, finely chopped
- 3 garlic cloves, crushed
- 5 cups chicken stock
- 400 g carrots with the tops trimmed and reserved
- 1 turnip, cut into 6 wedges
- ½ cup roasted hazelnuts, chopped
- Carrot-top salsa verde
- 1 ½ cup parsley
- 1 ½ tbsp fresh thyme leaves
- 1 tbsp drained capers
- 1 garlic clove , minced
- 1 tsp brown sugar
- ½ cup olive oil
- 1 ½ tbsp white wine vinegar
Instructions
Heat 2 tbsp of olive oil in a pot over a high heat. Cook the lamb in batches for 5 minutes, turning occasionally until brown all over. Remove from the pan
Reduce the heat to medium and add the remaining oil to the pan. Cook the onion, celery and garlic, stirring occasionally , for 10 minutes or until softened. Return the lamb to the pot and pour in stock. Bring to the boil.. Once boiling reduce the heat to low and simmer covered for 2 hours or until the meat is tender.
Increase the heat to medium high and add in the carrots and turnip wedges. Cook for 15 minutes or until the liquid has thickened slightly.
For the Carrot tops salsa verde
Combine all the ingredients together in a blender or a food processor. Add in ½ cup of reserved carrot tops and blend on high until well combined. Season well.

Serve irish stew topped with roasted hazelnuts and carrot top salsa verde.
