• This hearty Irish stew puts a fresh spin on a classic, with tender lamb neck, sweet carrots and earthy turnip slowly simmered until meltingly tender. The real star is the vibrant carrot-top salsa verde, made with the leafy tops that might otherwise go to waste and spooned over the rich stew for a fresh, herby finish. Toasted hazelnuts add the perfect final crunch.
