    Vegetarian noodle stir-fry with hoisin sauce

    Ingredients

    • 340g packet rice noodles
    • 3 tbsp canola oil
    • 375g store-bought packet of stir-fry vegetable mix
    • 1/2 tsp dried chilli flakes
    • 60ml hoisin sauce

    Instructions

    Soak rice noodles in a bowl of boiling water until pliable, 15 – 20 minutes. Drain and set aside until needed.

    Heat canola oil in a large skillet placed over high heat. Add store-bought pack of stir-fry vegetable mix and sauté until the vegetables are soft, about 5 minutes.

    Add dried chilli flakes and the cooked rice noodles, and toss well to combine.

    Remove from heat and drizzle with hoisin sauce.

    Toss once more to distribute the sauce, then serve.
