    Smoky chipotle BBQ sauce

    Serves: Makes 750ml
    Cooking Time: 30 mins

    Ingredients

    • 1 chipotle pepper
    • 1 tbsp (15ml) olive oil
    • 1 small onion, finely chopped
    • 4 garlic cloves, peeled and crushed
    • 15ml (1 tbsp) hot English mustard
    • 15ml (1 tbsp) smoked paprika
    • 45ml (3 tbsp) brown sugar
    • 500ml (2 cups) ketchup or
    • tomato sauce
    • 80ml (1/3 cup) Worcestershire sauce
    • 80ml (1/3 cup) apple cider vinegar
    • 15ml (1 tbsp) molasses
    • salt and freshly ground black
    • pepper, to taste

    Instructions

    Place the chipotle pepper in 250ml (1 cup) boiling water, 10 – 15 minutes or until soft. Chop the pepper finely.

    In a medium saucepan, heat the olive oil over medium heat. Add the onion and garlic, and cook, stirring occasionally until translucent, about 5 minutes. Stir in the mustard and paprika and cook, 30 seconds.

    Reduce the heat to medium-low and stir in the brown sugar, ketchup or tomato sauce, Worcestershire sauce, vinegar, molasses and the chopped chipotle. Season to taste.

    Cook, stirring occasionally until thickened, 5 – 10 minutes. Pour into sterilised jars, turn them upside down and allow to cool completely.
