• Scrumptious fruit and bran rusks

    Serves: Makes about 24
    Cooking Time: 1 hr + overnight for drying

    Ingredients

    • 500g cake flour
    • 5ml (1 tsp) baking powder
    • a pinch of salt
    • 100g muesli
    • 100g bran flakes
    • 100g mixed raisins and currants
    • 50g sultanas
    • 50ml sesame seeds
    • 50g desiccated coconut
    • 200g brown sugar
    • 250ml (1 cup) plain yoghurt
    • 1 large egg, beaten
    • 250g margarine, melted
    • 25ml vanilla extract

    Instructions

    Preheat the oven to 180°C and lightly grease a baking tray.

    Combine all the dry ingredients in a bowl and mix well.

    Mix the yoghurt, egg and margarine, then stir in the vanilla extract.

    Add the yoghurt mixture to the dry ingredients and mix to incorporate.

    Pour the mixture into the baking tray and bake until golden, about 50 minutes.

    Remove and cut into rusks. Separate slightly so that any moist parts are exposed. Decrease the oven temperature to 100°C.

    Place the tray back in the oven and leave overnight until the rusks have dried completely. Store in an airtight container.
