• Coconut roti

    Cooking Time: 20 mins plus extra for rising

    Ingredients

    • 240g (2 cups) cake flour, sieved salt, to taste
    • 130g desiccated coconut
    • 60ml (¼ cup) boiling water
    • 15ml (1 tbsp) butter

    Instructions

    In a large bowl, mix the flour, salt and coconut with enough boiling water to make a soft, but not sticky, dough.

    On a lightly floured surface, knead the dough for about 10 minutes. Divide into 12 pieces and flatten each piece slightly to form a small disc.

    Place each disc between 2 pieces of wax paper and roll out to form discs about 2mm thick.

    Heat a heavy-based frying pan to hot.

    Peel the paper off each roti and fry until light brown, about 1 minute on each side. Remove and keep warm.

    Serve with creamy prawns.
