• It doesn’t have to take forever to make jam: if you’re pressed for time, the quickest and most efficient way is in the microwave. Here’s how to make strawberry jam in the microwave: Wash and chop 500g fresh strawberries. Place in a large, microwaveable dish and squeeze over 80ml (1/3 cup) fresh lemon juice. Microwave on high until the strawberries are just soft, about 5 minutes. Remove and stir in 400g sugar. Microwave on high again, stopping and stirring occasionally, for a further 20 minutes. Remove from the microwave and leave to cool for about 10 minutes. Spoon into sterilised jars, seal and label. Don’t worry if the jam seems thinner than normal, it will thicken once it has cooled down in the jars.
