Curry Leaves Sauce Pasta
Ingredients
250g pasta – fettucini works well
half an onion, finely chopped
100g butter
250ml fresh cream
3 tbs Razia’s Pickle Curry Leaves Sauce
freshly grated Parmesan cheese – as much as you’d like (keep some for garnish)
salt & pepper to taste
punnet of mushrooms, sliced
protein of your choice (cooked) – we airfried some frikkadel
half a cup of pasta water
200g baby spinach
fresh herbs for garnish
Method
Boil pasta until al dente
melt butter in a deep pan on medium heat
add onion and saute until tender
add cream and bring to boil
add Razia’s Pickle Curry Leaves Sauce
add mushrooms
reduce heat and allow to simmer for about 3min
remove from heat, add parmesan cheese, salt and pepper and mix well
add spinach, pasta, pasta water, protein and cook on medium heat until spinach is cooked
garnish with parmesan and any fresh herbs
