Every Sunday for the month of August, Chef Ryan has invited a friend and fellow chef to join him in creating a once-off collaborative lunch. The lineup is an impressive standing of the Cape’s chefs he has worked with in the past and like-minded colleagues who share his ethos of hyper-local, and hyper-sustainable cooking.

In the spirit of Sunday lunches – especially during winter – the idea is to gather together in the warmth, bring friends together around tables, and enjoy long, lazy lunches with beautiful food, fine wine, great conversations, and plenty of laughter. For the chefs, it also provides the opportunity to get together and reconnect.

“After a busy season, winter is really the time when we as fellow chefs get time to reconnect and touch base with one another. Things are a bit quieter; we all have a bit more time on our hands, and this presents a wonderful opportunity to get together and do what we love most, which is obviously to cook. I’m really looking forward to getting into the kitchen with these incredible chefs who I am also privileged to call good friends,” says Chef Ryan.

The first lunch will kick off with Chef Luke Dale Roberts joining Ryan in the kitchen – a reuniting of a dream team that saw The Test Kitchen feature prominently on the World’s 50 Best Restaurants list.

The following week, Chef Dale Stevens from Faber at Avondale will cook alongside the Salsify team. Dale and Ryan first met when working as young chefs and have bonded over their shared passion for seasonally-led cooking.

Next up will be the rising star Chef Mmabatho Molefe who previously worked at Salsify before going on to open Emazulwini, her restaurant which has received critical acclaim for her impressive Nguni-inspired cuisine.

The lunch series will culminate with Chef Ivor Jones of Chefs Warehouse Beau Constantia. The two having cut their teeth in the industry together, remain good friends since moving on to their current successes.

Chef Ryan will work together with each of the chefs to compose an eight-course menu celebrating both the chefs’ culinary ethos, signature style, and the beauty of Cape Town’s winter produce. Naturally, each menu will be different from one lunch to the next as the chefs all bring their own flavours, techniques, and styles of cooking to Salsify’s pass.
