1. Believe it or not, mushrooms consist of up to 92% water, which is why they shrink so drastically once cooked.
3. Mushrooms are full of umami (Japanese for ‘a pleasant and savoury taste’), now recognised as the official fifth taste, along with sweet, salty, sour and bitter.
4. Go and pick your own under the supervision of an expert. But never, ever eat mushrooms you have picked on your own, unless you arean expert – some of them are deadly poisonous.
