- ¼ quantity of basic bread dough
- milk, for brushing
- coarse salt or sesame seeds, to garnish
Preheat the oven to 180°C. Grease a baking tray.
Make your dough according to the recipe on p45. Place the dough on a lightly floured work surface and knead for 3 minutes.
Roll the dough into a sausage shape and cut into slices of about 15g. Roll each one into a stick the thickness of your little finger and about 20cm in length.
Place on the baking sheet and set aside to prove for about 10 minutes.
Brush with milk and sprinkle with salt or sesame seeds.
Bake in the oven for 20 minutes then turn the oven down to its lowest setting and leave the sticks to crisp.
When cold, store in an airtight container.
