Champagne and watermelon cocktail
- 750ml (3 cups) fresh watermelon juice (see recipe for instructions)
- large handful ice cubes, crushed
- 80ml (⅓ cup) tequila
- squeeze fresh lime juice
- 375ml (1. cups) Champagne
- watermelon wedges, to garnish
- basil leaves, to garnish
- lime slices, to garnish
To make watermelon juice, blitz the flesh of ½ a small watermelon in a blender until smooth. Strain the pulp through a fine-mesh sieve. Reserve the strained liquid and divide among 4 – 6 Champagne coupes.
Top each glass with the crushed ice, then divide the tequila, lime juice and Champagne among the glasses. Garnish each cocktail with either a watermelon wedge, a few basil leaves or a lime slice. Serve immediately.
