Raspberries in many varieties are available throughout the summer. In a long champagne flute, this drink looks as good as it tastes.
- 300g raspberries, plus extra for serving
- 50g castor sugar
- 50ml brandy
Blend together the raspberries, sugar and brandy until pale pink and smooth.
Divide the berry mixture between 6 champagne flute glasses. Pour in enough champagne to fill to about 3cm before the top of the glass.
Pop in a few extra whole raspberries and enjoy.
