Egg nog recipe

It’s close to Christmas and since egg nog is the quintessential Christmas drink in the northern hemisphere, I thought I’d sneak in a chilled egg nog recipe to suit our wonderful summer holiday climate.

Egg nog

Serves: 3


  • 3 egg yolks
  • 125g castor sugar
  • 200ml dark rum
  • 75ml cream
  • 100ml brandy
  • dash freshly grated nutmeg



Beat the egg yolks until pale in colour. Gradually add the sugar, beating constantly. Add the rum gradually, then the cream and brandy, beating constantly. Finally, add the merest dash of nutmeg. Refrigerate for 3 hours until thoroughly chilled and serve.
