    Figs with a blue cheese, bacon and black pepper crumble

    Serves: 4
    Cooking Time: 20 mins

    Ingredients

    • 8 slices streaky bacon
    • oil, for frying
    • 100g blue cheese
    • freshly ground black pepper, to taste
    • 8 fresh, ripe figs
    • honey, for drizzling

    Instructions

    Fry the bacon in a pan with a little oil over medium heat until very crispy.

    Cut the cheese into small cubes and place in a bowl. Season with black pepper.

    When the bacon has cooled, chop finely and add to the blue cheese and black pepper mixture.

    Slice the figs into quarters, being careful not to cut them all the way through. Gently squeeze the base of each fig to open the tops and expose the pink flesh inside.

    Sprinkle the crumble mixture over the figs, stuffing a little bit into each fig.

    Drizzle the figs with honey and serve.
