Fried aubergine with vinegar and herbs is simply delectable. Aubergine has a wonderful soft flesh, and the skin crisps deliciously when fried. The saltiness of vinegar is the perfect accompaniment. 

Fried aubergine with vinegar and herbs

Ingredients

  • vegetable oil, to fry
  • 6 baby aubergines, cut into wedges
  • sea salt and freshly ground black
  • pepper, to taste
  • To serve

  • 60ml (¼ cup) fresh coriander,
  • chopped
  • 60ml (¼ cup) fresh mint, chopped
  • apple cider or sherry vinegar
  • fresh lime wedges
  • fresh mint leaves

Instructions

Heat the oil in a medium saucepan over medium-high heat.

Fry the aubergines in batches until golden and soft, about 5 minutes. Remove using a slotted spoon and drain on paper towel. Season well and place the wedges on a platter.

Combine the herbs. Place the herbs and vinegar in separate dipping bowls.

Invite guests to dip the aubergines in vinegar followed by the herbs. Serve with lime wedges and mint.
