Grilled watermelon, feta and olive stack
- 45ml (3 tbsp) SPAR Extra Virgin Olive Oil
- 8 watermelon pieces (cut into 3cm diameter discs with a cookie cutter)
- SPAR Himalayan Pink Salt and freshly ground black pepper, to taste
- 8 SPAR Plain Feta Cheese wheels (cut into 3cm diameter discs with a cookie cutter)
- 4 SPAR Stuffed Olives with Chilli
- 60ml (4 tbsp) SPAR Balsamic Glaze
1. Preheat a griddle pan over high heat. Drizzle the olive oil over the watermelon and season to taste. Chargrill very quickly, until just slightly seared, about 1 – 2 seconds.
2. Place the watermelon discs on a platter, and top each with a feta piece.
3. To assemble, using a cocktail pick, thread through the olive, followed by the watermelon and feta stack. Repeat these steps for all of the skewers, drizzle with the balsamic glaze and serve.
