Honey, banana and hazelnut clafoutis

A deliciously moist cake-like baked dessert with flavours reminiscent of banana bread.
Serves 6 EASY 45 mins

Preheat the oven to 180°C. Grease a 25cm-diameter cast-iron pan or baking dish. Blitz 3 large eggs, 1 (120g) banana, 250ml (1 cup) thick/double thick cream, 80g self-raising flour, 110g melted salted butter, 60g honey, 60g muscovado sugar and 1 tsp vanilla essence in a food processor until smooth. Pour the mixture into the prepared dish. Halve 3 (360g) bananas and slice them lengthways to arrange on top. Sprinkle over 4 tbsp chopped hazelnuts, drizzle 2 tbsp honey over and bake, 35 minutes. Whisk 80g Nestlé Caramel Treat, 1 tbsp castor sugar and a pinch of salt together until smooth. Fold in 250ml (1 cup) freshly whipped cream. Serve the clafoutis warm with the caramel cream and garnish with fresh mint, if desired.

COOK’S TIP
The clafoutis can also be served with ready-made custard or vanilla ice cream.
