Keep your cucumber cool with this revitalising, alcohol-free summer sipper
In a small saucepan, boil 200ml water and 150g brown sugar, stirring until the sugar dissolves. Remove from the heat and leave to cool, then pour into a food processor together with 1 small diced cucumber, 80ml (1/3 cup) lemon juice and 5ml (1 tsp) minced fresh ginger. Process until smooth, cover and chill. To serve, strain the lemon mixture into a jug. Add 500ml (2 cups) sparkling water, stir and garnish with thinly sliced lime, cucumber and fresh mint leaves.
