Pomegranate and watermelon sorbet recipe

Pomegranate and watermelon sorbet is deliciously refreshing. These fruity and fresh flavours are perfect for summer, so kick back with this frozen treat and enjoy your day. Light, sweet and delicious!

If you’d like to make it slightly more adult, add a tot of Campari and one finely chopped chilli to the mixture.

Pomegranate and watermelon sorbet

Serves: Makes 2 litres
Cooking Time: 15 mins + freezing

Ingredients

  • 1 large watermelon
  • 150g pomegranate rubies
  • 200ml sugar syrup (see recipe below)
  • 40ml liquid glucose
  • 1 extra large egg white
  • juice of 1 lemon

Peel, cube and seed the watermelon. Place in a blender and blitz until smooth.

Mix together the watermelon juice, pomegranate rubies, sugar syrup, glucose, egg white and lemon juice. Pour into the ice-cream churner and churn until frozen and fluffy.

Scoop into a container and freeze until ready to serve.

Notes

Sugar syrup: To make sugar syrup, place 100ml water, 100ml granulated sugar and a squeeze of lemon juice in a small pot over medium heat. Stir continuously until the sugar has dissolved. Bring to a boil and simmer for 2 minutes. Remove from heat and set aside to cool.
