• Prawn and noodle stir-fry with ginger, lime and ban sprouts

    Cooking Time: 25 mins


    • peanut oil, for frying
    • 15ml fresh ginger, chopped
    • 1 garlic clove, chopped
    • 150g spring onions, sliced
    • 100g sugar snap peas
    • 100g baby corn, halved
    • 100g enoki mushrooms
    • 400g egg noodles, cooked
    • 300g prawn tails
    • juice of 2 limes
    • 125ml oyster sauce
    • 500ml bean sprouts
    • fresh coriander, to garnish



    Heat a good slug of oil in a wok or large frying pan. Add the ginger and garlic and fry for 30 seconds. Add all the vegetables and stir-fry for 2 minutes before adding the noodles and prawns. Fry for 2 more minutes.


    Pour over the lime juice, oyster sauce and bean sprouts. Fry for a minute more to coat all the ingredients.


    Garnish with plenty of coriander and some more bean sprouts, and serve immediately.
