Saffron fondant potatoes

Preheat the oven to 160ºC. Cut 3 large potatoes lengthways into 1,5cm-thick slices. Using a pastry cutter, cut the slices into 3cm-diameter discs. Melt 45ml (3 tbsp) butter in an ovenproof frying pan with a lid. Add the potatoes, 1 pinch saffron and enough water or chicken stock to reach a third of the way up the potatoes. Season and bring to the boil, then cover and bake in the oven for 45 minutes, turning and basting occasionally.
