In this recipe we have added a bit of Bollywood glamour with a great mix of spices and then a delicious old-fashioned hot mayonnaise. Skewered spicy prawns with curried mayonnaise is the perfect dish for an adventurous palate.
Skewered spicy prawns with curried mayonnaise
- 24 good-sized prawns, peeled, with tails
- 10ml medium curry powder
- 7ml ground palm sugar
- 7ml red chilli flakes, ground
- oil, for frying
- 3ml cayenne pepper
- salt, to taste
- 250ml good-quality mayonnaise
- 45ml hot curry powder
Cook the prawns in lightly salted boiling water for about 5 – 10 minutes. Drain and cool.
Mix the curry powder, palm sugar and chilli flakes together and lightly dust over the prawns. Shallow-fry in a little oil for about 2 minutes to release the flavours of the curry and chilli. Cool and thread the prawns onto bamboo skewers – two per skewer. Season with cayenne pepper and salt.
Mix the mayonnaise ingredients together and serve with the skewered prawns while still hot.
