• In this recipe we have added a bit of Bollywood glamour with a great mix of spices and then a delicious old-fashioned hot mayonnaise. Skewered spicy prawns with curried mayonnaise is the perfect dish for an adventurous palate.

    Skewered spicy prawns with curried mayonnaise

    Serves: 6
    Cooking Time: 30 mins


    • 24 good-sized prawns, peeled, with tails
    • 10ml medium curry powder
    • 7ml ground palm sugar
    • 7ml red chilli flakes, ground
    • oil, for frying
    • 3ml cayenne pepper
    • salt, to taste
    • Mayonnaise

    • 250ml good-quality mayonnaise
    • 45ml hot curry powder



    Cook the prawns in lightly salted boiling water for about 5 – 10 minutes. Drain and cool.


    Mix the curry powder, palm sugar and chilli flakes together and lightly dust over the prawns. Shallow-fry in a little oil for about 2 minutes to release the flavours of the curry and chilli. Cool and thread the prawns onto bamboo skewers – two per skewer. Season with cayenne pepper and salt.


    Mix the mayonnaise ingredients together and serve with the skewered prawns while still hot.
