The mojito is a classic, so why not give it an updated kick? The spiced mojito has some delicious new flavours to offer without abandoning the traditional combination. Zesty and refreshing!
- 4 lime wedges, plus a few to garnish
- 6 mint leaves
- 20ml sugar syrup
- 50ml rum
- 6 ice cubes
- ginger beer, to top up
- mint sprig, to garnish
In a cocktail shaker or glass jar with a secure lid, combine the lime wedges, mint and sugar syrup. Muddle together using a wooden muddle or the back of a wooden spoon. Add the rum and 3 ice cubes, and shake to combine. Strain through a fine meshed sieve into a highball glass. Top up with the remaining ice cubes and chilled ginger beer. Garnish with a mint sprig and a few lime wedges, and serve.
