    Spicy Rice dish

    Ingredients

    • Olive oil
    • 1 onion, finely chopped
    • 1 carrot, peeled and finely chopped
    • 1 red pepper, deseeded and chopped
    • 1 tsp chili flakes
    • 1 tsp turmeric
    • 1 tsp paprika or smoked paprika
    • 1 cup long grain rice
    • 2 cups chicken stock ( add more to top up if needed)
    • ½ cup frozen peas
    • Chopped parsley

    Instructions

    HEAT oil in a pan over medium high heat. Once hot, add the chopped onion, carrots and red pepper. Cover with a lid and cook over a gentle heat for 3 minutes until softened but not browned.

    REMOVE the lid and add the chilli flakes, turmeric and paprika. Cook for 2 more minutes.

    ADD the rice and mix until coated. Pour in the chicken stock and season to taste

    BRING to the boil. Cover with a lid and turn the heat down. Cook for 7-10 minutes, or until the rice is nearly cooked. ( topping up with stock or water if needed until rice is cooked)

    ADD the peas and stir. Cook for 3 more minutes or until the rice is done to your liking and the peas are hot.

    SERVE topped with chopped parsley and squeeze of lemon.
