- 2 onions, finely chopped
- 2 garlic cloves
- butter, for frying
- 1kg tomatoes, skins removed
- salt and white pepper, to taste
- a squeeze of fresh lemon juice
Fry the onions and garlic in butter, add the tomatoes and cook through. Season with salt, white pepper and a splash of fresh lemon juice.
Blend the soup with a hand blender.
Serve with crusty bread.
