Warm pancetta-wrapped Brie with roasted plums and pesto dressing
- 60ml (¼ cup) honey
- 100g Brie wedge, cut in half
- 4 slices pancetta (or Parma ham)
- 250ml (1 cup) rocket
- 250ml (1 cup) watercress
- 80ml (? cup) basil pesto
- warm baguette, to serve
Preheat the oven to 220°C. Place the plums in a roasting tray and drizzle with the honey. Grill until tender, about 10 minutes, depending on its ripeness.
Wrap the pancetta around the 2 pieces of Brie. Heat a pan and gently fry the wrapped cheese until the pancetta is crispy.
Place the rocket and watercress in serving bowls, drizzle with the pesto and top with the warm cheese and roasted plums. Serve with the baguette.
