    Strawberry and Balsamic lollies

    Serves: Makes 8 – 10 (80ml each)
    Cooking Time: 25 mins + 5 – 7 hrs, to freeze

    Ingredients

    • 400g strawberries, sliced
    • 150g brown sugar
    • 125ml (½ cup) water
    • 30ml (2 tbsp) balsamic vinegar
    • 15ml (1 tbsp) fresh lemon juice

    Instructions

    In a bowl, combine the strawberries and sugar. Mix well and let it sit, 15 minutes. Place in a pot over medium heat with the water and let it simmer until the sugar has dissolved, about 5 minutes. Remove from heat and allow to cool to room temperature.

    In a blender or food processor, blitz the strawberry mixture, balsamic vinegar and lemon juice until smooth.

    Divide the mixture among the moulds and freeze, 5 – 7 hours.
