• Grapefruit, orange and minneola stuffing

    Ingredients

    • 1 grapefruit, peeled and segmented
    • 2 oranges, peeled and segmented
    • 2 minneolas, peeled and segmented
    • 30g (½ cup) white breadcrumbs, toasted
    • juice of ½ orange
    • 30g butter, melted
    • 30ml (2 tbsp) fresh mint, roughly chopped
    • salt and freshly ground black pepper, to taste

    Instructions

    Place the citrus fruits in a colander and drain off the excess liquid.

    Place in a bowl and add the breadcrumbs, juice, butter and mint. Season to taste and set aside.
