• The first samoosa you fold might seem a bit fiddly, but by the end of the second one you’ll wonder what all the fuss was about. Here’s how to fold samoosas: Buy samoosa pastry from your local supermarket and cut each piece in half lengthways. Lay one strip at a time on a work surface. Place 15ml (1 tbsp) of filling near the right hand corner. Fold the bottom right hand corner diagonally over the filling, so the bottom edge is parallel to the left hand long side. Then fold the triangle with the filling away from you, enclosing the top part of the triangle. Fold again towards the right, keeping the triangle shape. Continue folding triangles in this way until you come to the end of the strip of pastry. It should be a perfect triangle which totally encases the filling. If you like you can freeze samoosas and cook them later.
