• This is a fancier version of the usual store-bought fruit juice – simply add a shot or two of alcohol and you’ve got yourself a quick and easy fruity cocktail.

    Pawpaw, melon and blueberry cooler

    Ingredients

    • 1kg pawpaw, peeled, seeded and chopped
    • 300g melon, peeled, seeded and chopped
    • 500ml (2 cups) orange juice
    • 120g blueberries
    • ice, to serve
    • fresh mint sprigs, to serve

    Instructions

    Place the pawpaw, melon and orange juice in a blender and purée until smooth.

    Stir in the blueberries and serve over lots of ice, garnished with fresh mint.
