WHAT YOU NEED
1 thumb-sized piece fresh ginger, roughly chopped
1 tsp ground cinnamon
½ tsp coarse salt
150g white sugar
150g treacle sugar
1 tsp vanilla paste
HOW TO DO IT
- In a small saucepan over high heat, bring the water, ginger, cinnamon and salt to the boil.
- Add the sugars, reduce the heat and simmer, stirring, for 15 minutes.
- Remove from heat and allow to cool. Stir in the vanilla paste and pour through a strainer/muslin cloth into a clean glass bottle, then seal and refrigerate.
