Fudgy choco brownies

Serves: 6 – 8
Cooking Time: 50 mins

Ingredients

  • 100g plain chocolate
  • 100g white chocolate
  • 2,5ml (½ tsp) vanilla extract
  • 125g unsalted butter, softened
  • 275g castor sugar
  • 2 large eggs, beaten
  • 75g cake flour
  • 60ml (¼ cup) cocoa powder + extra, to serve
  • 100g mini marshmallows
  • pink sugar baubles, to serve

Instructions

1

Preheat the oven to 180°C. Grease and line a 20cm square tin with baking paper.

2

Place the chocolate in a heatproof bowl over a pot of simmering water (the bottom of the bowl should not touch the water). Stir until melted, remove from the heat and set aside.

3

Put the vanilla, butter and castor sugar into a large bowl and, using an electric mixer, beat until well combined. Add the eggs one at a time, beating continuously.

4

Sift the flour and cocoa powder into the bowl and add the melted chocolate, stirring until all of the ingredients have been incorporated. Add the marshmallows and mix well.

5

Spoon the mixture into the lined tin and bake until a crust forms on the edge but the centre is still soft, about 35 minutes.

6

Remove from the oven and leave for 20 minutes, then cut into squares. Dust with cocoa powder before serving and sprinkle with pink sugar baubles.
