Apple cider served over watermelon and pink-lemonade popsicles

Serves: 8
Cooking Time: 5 minutes + 4 hours or overnight, to freeze

Ingredients

  • 250ml (1 cup) watermelon juice
  • 150ml pink lemonade
  • 70ml water
  • 4 craft apple/pear ciders (such as Sxollie)

Instructions

Combine the watermelon juice, pink lemonade and water in a jug. Pour the liquid into popsicle moulds and add a wooden popsicle stick. If necessary, secure the stick with sticky tape or foil. Freeze for 4 hours or overnight until solid.

Place each popsicle in a champagne coupe or glass and top with cider to serve.
