Blueberry silly-pants

In our family, a fool is called “silly-pants”, so blueberry fool is blueberry silly-pants. Perfect for children or last-minute entertaining, this dessert is a healthy alternative to a traditional fool, as it uses yoghurt. Either plain or coconut flavoured yoghurt can be used. It is light and delicious and can also be served for breakfast.

Blueberry silly-pants

Ingredients

  • 150g fresh blueberries
  • 90ml water
  • 200ml double-thick yoghurt
  • 80ml fresh cream, whipped
  • 20ml (4 tsp) castor sugar

Place the blueberries and water in a saucepan and bring to the boil. Reduce the heat and simmer gently until soft, about 10 minutes. Remove from the heat and leave to cool completely, then mash with a fork so that they are still slightly chunky, with a lovely purple colour.

Reserve 20ml (4 tsp) of the mashed blueberries and mix the rest with the yoghurt. Fold in the cream and sugar.

To serve, pour into 2 bowls or glasses and top with the reserved blueberries.
