To drink: Zondernaam NLH 2007 is strongly flavoured but not too dominant and wonderfully balanced. It will still let the more delicate dessert flavours come through.

Buttermilk puddings with stewed mixed berries

Serves: 4
Cooking Time: 20 mins + overnight

Ingredients

  • 1 vanilla pod
  • 150ml milk
  • 70g castor sugar
  • 15ml (1 tbsp) gelatine powder
  • 500ml (2 cups) buttermilk
  • fresh mint, to garnish
  • mixed berries, to serve

Instructions

Lightly oil 4 moulds or teacups.

Split the vanilla pod and scrape out the seeds. Combine the pod, seeds, milk and sugar in a small saucepan. Heat over a low heat until the milk almost boils, stirring continuously until the sugar has dissolved. Remove from the heat and discard the vanilla pod.

Sprinkle the gelatine over the milk mixture and stir until the gelatine has melted.

Add the buttermilk and whisk for 1 minute. Pour the mixture into the moulds and leave to cool, then chill overnight.

To serve, turn the puddings out of the moulds, garnish with mint and serve with stewed mixed berries.
