• A chilled version of this traditional spiced hot drink.

    Cooking Time: 35 minutes + 1 hour, to chill


    • 1 orange, thickly sliced
    • 250ml (1 cup) freshly squeezed orange juice
    • 500ml (2 cups) water
    • 200g white sugar
    • 8 cinnamon sticks
    • To serve
    • cane spirit
    • 3 fresh limes, quartered
    • ice cubes



    Place the orange slices, juice, water, sugar and cinnamon sticks in a saucepan and stir over gentle heat until the sugar has dissolved. Increase the heat and allow to simmer gently until reduced slightly and the cinnamon has infused well, about 30 minutes. Remove from heat, allow to cool and refrigerate until chilled completely.


    To assemble, pour a little of the infused orange syrup into short glasses and top with a shot or two of cane spirit (depending on how strong you like it). Serve with the fresh lime quarters and ice cubes.
