Crusty rolls

You can make the rolls and cottage loaf with the white or brown bread recipe

Crusty rolls

Serves: 18 – 24 rolls, depending on type of roll
Cooking Time: 20 mins + proving time

Ingredients

  • KNOTS
  • quantity of basic bread dough
  • 1 large egg, beaten, to glaze
  • sesame or poppy seeds, to decorate

Instructions

Preheat the oven to 200°C. Grease a baking tray.

Make your dough according to the recipe on p45 and use one-third of the quantity to make the knotted rolls.

Divide the dough into 18 portions, roll each portion into a thin sausage shape and twist into a knot.

Set the knotted rolls aside to prove until double in size.

Glaze the rolls with egg wash and sprinkle with sesame seeds or poppy seeds, or leave them plain.

Bake in the centre of the oven until they sound hollow when tapped, about 20 minutes. Remove from the baking sheet and cool on a wire tray.

Notes

Be careful not to over-prove or the dough will spread and lose its shape.
