    This aromatic dish draws on the bold flavours of the Mediterranean, straight to your Valentine’s table, using just a few clever ingredients.

     

    Ingredients:

     

    • 6 free-range, skinless, boneless chicken thighs
    • 2 tablespoons natural yoghurt (plus extra to serve)
    • 2 teaspoons Baharat spice mix
    • 1 bulb of garlic
    • 2 red onions
    • 2 lemons
    • 1 x 400g tin of chickpeas.

     

    Method:

     

    1. Marinade: Toss chicken thighs in a bowl with yoghurt, Baharat, olive oil, and seasonings. Grate in half a clove of garlic, add a few red onion petals, and the zest and juice of one lemon. For the best flavour, let it marinate in the fridge for 2 hours or overnight.

    2. The Technique: Double skewer the chicken thighs and thin lemon slices, then suspend them over a high-sided roasting tray containing the halved garlic bulb and onion quarters. Roast at 200°C for 45 minutes, adding the drained chickpeas halfway through

    3. Serve: Squeeze the roasted garlic back into the tray to toss with the chickpeas and onions before serving the juicy chicken with a dollop of fresh yoghurt and extra spice.

     

    The Dessert: Blondie Cake

    Golden and indulgent, this dish offers a considered take on a familiar classic. Built around everyday pantry staples, it demonstrates how technique and balance can elevate simple ingredients into something quietly impressive.

     

    Ingredients:

     

    • 200g each of soft unsalted butter
    • golden caster sugar
    • self-rising flour
    • 4 large eggs
    • 200g white chocolate
    • 3 tablespoons each of crunchy peanut butter and blackcurrant jam

     

    Method:

     

    1. The Batter: Blitz the butter and sugar in a food processor, or in a bowl with a spoon until combined. Crack in the eggs, add the flour, and blitz until smooth. Snap in the white chocolate and pulse briefly to leave small chunks.

    2. The Ripple: Loosen the peanut butter with warm water and stir the jam to soften it. Spoon both over the batter and use a cocktail stick to create beautiful ripples through the surface.

    3. The Bake: Bake at 180°C for 30 minutes until golden. Let it cool before slicing into romantic bites.
