Dan’s peri-peri recipe
- 60ml (¼ cup) olive oil
- 1 onion, chopped
- 15ml (1 tbsp) garlic
- 5 tomatoes, peeled and chopped
- 1 small tin tomato paste
- 10ml (2 tsp) sugar
- 3 chillies, chopped
- 5ml (1 tsp) fresh thyme
- 2 lemons
- 250ml (1 cup) water
Heat the oil, add onion and garlic, and cook until soft.
Add the tomatoes, tomato paste, sugar, chillies and thyme. Peel the rind off one of the lemons and add together with the water. Bring to a boil, reduce heat and simmer with a lid on for about an hour.
When mixture has cooled, blend the sauce and add the juice of the other lemon.
