Chocolate brownie waffles with salted burnt honey buttercream

Lazy afternoons were made for massive stacks of moreish waffles! But we’re upping our game an extra notch this time with the ultimate fudgy mashup. 

This recipe combines all things rich and indulgent and soon it will be your go-to treat whenever the sweet bug bites! 

INGREDIENTS

Salted burnt honey buttercream 

  • 2 cups icing sugar, sifted
  • ½ cup cocoa powder, sifted
  • ½ cup milk
  • ¼ cup honey
  • 2 tsp. sea salt
  • ½ cup butter
  • 180 grams dark chocolate, melted

Waffles

  • 2 cups flour
  • 1 cup cocoa powder
  • 1 tsp. baking powder
  • 2 tsp. bicarbonate of soda
  • ½ tsp. salt
  • cup brown sugar
  • 2 large eggs, lightly beaten
  • cup + 1 Tbsp. vegetable oil 
  • cups milk
  • 250 grams dark chocolate, roughly chopped 
  • Serving suggestion
  • 10 scoops vanilla ice cream
  • 5 figs, quartered

METHOD

Salted burnt honey buttercream  Beat icing sugar, cocoa and milk together in the bowl of a stand mixer. 

MELT honey, salt and butter in a pot over medium heat. Bring to the boil for 6 minutes, stirring occasionally, until browned slightly. Remove from the heat and, while the mixer is running on low speed, pour into the icing sugar mixture in a slow steady stream. Beat for 30 seconds to combine.

ADD the melted chocolate and mix until the buttercream is smooth and glossy. Set aside.

Waffles  Sieve flour, cocoa powder, baking powder, bicarb and salt into a bowl. Mix in the brown sugar. Make a well in the centre of the dry ingredients and add the eggs, oil, and milk. Beat together until the batter is well combined and smooth. Set aside for 10 minutes, then stir to mix everything together again.

PREHEAT a waffle iron and spray with non-stick cooking spray.

SCOOP some batter into the waffle iron and sprinkle with chunks of dark chocolate. Cook waffles according to the manufacturer’s instructions. Carefully remove waffles using a cake skewer or fork and repeat with the remaining batter.

Serving suggestion  Top waffles with scoops of ice cream, fresh figs and a generous drizzle of burnt honey buttercream. 

TIP:  We cooked our waffles for 1 minute 30 seconds to ensure a deliciously gooey brownie-like center.
